The working alleys of the Tsukiji Outer Market. Even after the wholesale market moved to Toyosu, the fishmongers, knife-makers, dry-goods sellers still keep the old rhythm. Sushikuni runs one counter, twice each day.
The signature: koboreuni-don. A bowl piled with the day's sea urchin until it spills over the rim. The chef's Edomae nigiri rotates with the catch. Lunch from ¥2,000. Reservation courses from ¥4,000.
